Two Ingredient Coconut Macaroons: Quick and Easy Coconut Cookies

Two Ingredient Coconut Macaroons: Quick and Easy Coconut Cookies
Ingredients:

500g desiccated coconut
Can of sweetened condensed milk

Macaroons are one of the most popular cookies, whether for a holiday, or for nibbling on while watching television. But most people think that they are too hard to make. True, some macaroon recipes are time consuming and require several ingredients. There are a couple of macaroon recipes that don't demand as much time and money to make, though. One type of macaroon, in fact, is made with only two ingredients - and they take only a few minutes to create. Let's make some!
Do you know what desiccated coconut is? Much dryer than ordinary coconut, it can be difficult to find at a regular grocery store, but is sold on websites and at specialty stores. The coconut is a requirement for making the two-ingredient macaroons.
Preheat the oven to 350F and mix up the easy macaroons. First, put parchment paper on a baking sheet and set it aside for the moment. In a large bowl, pour a can of sweetened condensed milk. Add 500 grams (17.637 ounces) of desiccated coconut. The ounce size is unusual; make it easy on yourself and put 17-3/4 ounces in the measuring cup and take out a nice-size pinch. You can add more coconut, if needed, after mixing. Stir the two ingredients together to form the macaroon dough.
The cookies don't take long to make after you've mixed up the dough. Scoop up a large spoonful and drop it on the pan. Do that again, and again, to fill a baking sheet with macaroons. Bake for about 15 minutes or until golden brown.
Although the actual recipe for the macaroons requires only two ingredients you can definitely keep on going with the creation. Things that you can drizzle over the top of the cookies include chocolate syrup, strawberry syrup, or watery icing. Other things that you can place on top of the macaroons include cherries, strawberries, or chocolate bar chunks. Slightly melt chocolate bar chunks by laying them on the macaroons and placing them back in the warm oven for a minute or so. Once melted, the chocolate won't fall off of the cookies.
Macaroons are great gifts for most any occasion, can be served for no reason at all, and can be made in the way that you want them. They can be dipped in candy melts or served plain. But no matter how you make them, the most important things are that the cookies are not expensive, and that they take very little time to make.
