How to Make Scotch Eggs
Scotch eggs are one of my favorite finger food snacks. I loved eating them at the popular eatery in Lagos, Nigeria called Mr.Biggs. They are pretty easy to make, they can be eaten for breakfast with a cup of tea or coffee or they can snack time munchies. They can be served at parties or general staff meeting as finger food. I eat them with mustard and they are simply delicious.
Scotch eggs originated in England. They are basically hard boiled eggs coated with sausage meat and bread crumbs. Scotch eggs can be baked or fried but I prefer frying them.

The Ingredients are:

  • Hard boiled eggs
  • Flour
  • Eggs (raw) 
  • Sausage meat
  • Bread crumbs
  • Curry
  • Stock cubes (maggi cubes)
  • Jimmy Dean Sausage meat
  • A frying pan of Canola Oil or Vegetable oil for frying

Preparation

Boil the eggs for about twenty minutes to make them hard boiled. Mix the stock cubes and curry with the Sausage meat. In a bowl break two regular eggs and whisk them. In a second bowl, place the Jimmy Dean sausage meat, in a third bowl pour some flour, and in a fourth bowl pour some bread crumbs.
Take the hard boiled eggs and remove the shells, dip the egg in the flour and then cup the sausage meat around the eggs. When the sausage meat has taken the form of the egg, dip it in the bowl of whisked eggs. This acts as a binding agent. Finally, dip the sausage-dipped and egg-soaked eggs in the breadcrumbs.
Prepare a small pan and pour some oil, heat lightly and then fry the scotch eggs. Some people prefer to bake them. I have tried both, but I like the fried version better. If you have to bake them, preheat the oven to 350 degrees and bake for about forty minutes.
Scotch Eggs are delicious, and I love eating them with mustard. You have to try making them yourself!
