What to do with leftover ham? Beyond the usual ham sandwiches, there are many tasty ways to use the leftovers.
Ham Salad Two Ways
1) Dice ham, and add to a bed of Romaine lettuce and baby spinach. Add
hard-boiled eggs, shredded cheese (try cheddar or American), black
olives and finely chopped onions.
2) Finely chop ham. You may
use a food processor to do the chopping, but make sure the mixture is
slightly chunky, not blended smooth. Add mayonniase (reduced-calorie
mayonnaise works well also), and pickle relish. Serve atop bread or
crackers.
Beans and Ham
Add diced ham to navy or pinto beans, bean soup or split pea soup.
Pizza Pizzaz
For a Hawaiian pizza, top a cheese pizza with ham and crushed pineapple.
Breakfast Ideas
For an easy omelet, add diced ham, onions and chopped red and green
peppers. Additionally, you may serve slices of leftover ham alongside
fried or scrambled eggs.
Twice Baked Potatoes This
recipe easily doubles or quadruples to feed a crowd. Per person, allow
one medium-sized potato, 1/4 cup diced ham, 1/4 cup shredded cheese, and
2 tablespoons of sour cream. Bake potatoes at 350 degrees for one to
two hours, or until done. Remove potatoes from oven, allow to cool
slightly and slice potatoes in half lengthwise. Scoop out potato pulp,
leaving a firm shell. In separate bowl, mix, ham, cheese and sour cream
with potato pulp, and spoon the mixture into potatoes. Place potatoes on
a cookie sheet, and bake at 350 degrees for five minutes or until the
cheese melts.
