Vegan Cranberry Cookie Recipes

Vegan Cranberry Cookie Recipes
These cranberry cookies are absolutely delicious and addictive. Luckily, they are also pretty healthy, at least as far as cookies are concerned. They are easy to make and don't need any fresh ingredients.
Ingredients: 
1 cup rye flour (You could also use whole meal or oat flour.) 
1 cup all purpose flour 
2 heaped tablespoons of ground flax seed 
1/4 cup poppy seeds 
3/4 cup peanut butter (smooth) 
1/4 cup vegetable oil (You can substitute apple sauce if desired.) 
1 tablespoon vanilla extract 
1 tablespoon almond extract 
1 1/2 cup sugar 
1 tsp baking soda 
1/4 teaspoon salt 
6 tablespoons water 
3/4 cup dried cranberries (You can use more or less to taste.) 
(These would also be good with chocolate chips or nuts added in.)

Instruction 
1. Preheat oven to 375 F. 
2. Mix together the sugar, peanut butter, and oil. 
3. When that mixture is smooth, add the flaxseed and all of the remaining wet ingredients. 
4. Once that is well blended, add the baking soda and salt. Mix roughly, then add all of the remaining ingredients. 
5. Form the dough into balls (roughly tablespoon amounts for average sized cookies). 
6. Put the dough balls on an ungreased cookie sheet and bake for 10 minutes, until they are golden. 
7. Enjoy!

The great thing about vegan cookies is that you can eat as much of the dough as you want without worrying about salmonella. Although the cookies are not low sugar, they do have more nutrition than most cookies do, thanks to the seeds, peanut butter, and fruit.
