Dorito Nacho Dinner Cupcakes
Ingredients: 
Doritos 
Your choice of ingredients, such as hamburger, chicken, cheese, and/or olives 
Non-stick cooking spray 
Cupcake or muffin tin

What's your favorite Mexican food? Tacos? Nachos? Whatever it is, you'll love it even more when you turn it into a cupcake. Doesn't really sound that great? That's because you're mixing the image of a real cupcake with the taste of Mexican food; they're completely different. Where a regular cupcake is a dessert or treat, a Mexican cupcake is a lunch or a supper. And, since you're the one who will decide what goes in the cupcake, you can make cheesy, beefy nachos, crunchy enchiladas, or other yummy dishes. Since you make them like cupcakes, they're really easy to create, and suitable for almost any diet.
Doritos fit nicely into muffin tins so they are great for making the bottom and sides of the cupcakes. Doritos come in a number of flavors, such as Nacho Cheese, Cool Ranch, Salsa Verde, and Flamas (flames), you can create nachos, tacos, and other dinner cupcakes, with interesting flavors. Use Doritos that are all the same flavors, make cupcakes of different flavors, or even mix flavors within the same cupcake.
To get started making enchiladas, nachos, or tacos, lightly spray each muffin compartment with non-stick cooking spray. Lay a Dorito on the bottom of each compartment; it might be necessary to break it to get it in there, but try to cover the entire bottom with a large chip or two, rather than with crumbles or pieces. Stand Doritos up around the sides of the compartment as well.
Prepare the foods that you want to put inside the muffin cups. Some to choose from include browned, ground beef, small chunks of chicken, cheese, onions, olives, and rice. You can flavor meats with packaged taco seasoning or add your own spices. Bake the Mexican cupcakes until everything is cooked and melted - about 15 minutes at 350 degrees (more or less, depending on what ingredients you used). If you desire, top the tacos, enchiladas, or nachos with sour cream, tomatoes, lettuce, or other goodies.
There are variations that you can do, including one where you substitute the Doritos for corn bread, or even for pieces of hard taco shells. Some cupcakes can be eaten by hand, particularly if cheese is used in the recipe. Others will have to be eaten on a plate with a fork. However you make yours, it will be a filling meal, a dinner to suit everyone at the table, and a new favorite of your family.
